Hearty Wild Mushroom and Barley Soup (Vegan)

Split Pea Soup (vegan)

1.5 cups dried split peas, rinsed and picked through
.75 pound Russet potatoes, skin on, 1/2 inch pieces (the skin provides more fiber! but make sure to scrub any dirt off)
3 large carrots, 1/2 inch pieces
1 medium onion, 1/2 inch pieces
2 garlic cloves, minced
1/2 teaspoon dried thyme
